Looking for a healthy alternative to the standard burger? UC Davis and the Culinary Institute of America have found that blending finely chopped mushrooms with ground meat enhances flavor and nutrition. Use this recipe to try “the blend.”
Burger prep time: 15 minutes
Cook time: 10-15 minutes
Servings: 4
- 1 pound ground beef
- 1/2 pound mushrooms (recommended: cremini or white button)
- 1 teaspoon salt
- 3 tablespoons olive oil, divided
- 4 buns
- Toppings of your choice: lettuce, tomato, onions, cheese, pickles, etc.
Finely dice mushrooms (or gently pulse in food processor). Add 2 tablespoons of olive oil to skillet. Bring to medium/high heat and add mushrooms, sautéing for five to seven minutes until golden brown. Remove pan from heat and let cool for five minutes. Once the mushrooms have cooled, transfer them to a medium bowl. Add ground beef and salt, mix until thoroughly combined. Form into four patties. Add remaining 1 tablespoon of olive oil to sauté pan and cook burger patties on medium/high heat until desired doneness. Plate and add desired toppings.
